Firedoor by Lennox Hastie
The ancient language of fire is introduced to the modern kitchen through the controlled use of wood fired ovens and grills, placing a heavy reliance on human instinct. Through this technique, Firedoor explores the relationship between food and fire, creating the ultimate flavour enhancer. The kitchen will burn a collection of different woods daily to create coals that will then be used to enhance the natural characteristics of the ingredients. In this process, there is no temperature gauge – with the act of cooking reduced to experience, patience and instinct, a reflection of the honesty of the food.
